Gaucholihue
Gaucholihue is centrally located in the heart of Colonia Suiza a small historic settlement, Like
most of Patagonia, Colonia Suiza has a picture perfect landscape surrounded by tall mountains,
deep alpine lakes, and lots of other natural and beautiful landmarks. Millions of years ago
gigantic glacial ice sheets gouged and chiseled the landscape into what it is today. In fact,
remnants of this primordial glacier can still be seen all year round.

Curanto at its best, Curanto is made from a combination of assorted meats and vegetables
cooked in a shallow pit. The basic recipe calls for Chicken, beef, lamb, pork, and an
assortment of sausages. Mixed in are whole potatoes, sweet potatoes, squash, and carrots. All
of these ingredients are strategically placed on top a bed of steaming hot leaves distributed
over super heated stones. A second bed of leaves are placed over the meat and covered with
a fine cloth. All is then buried under a bed of very fine clean soil and allowed to cook for two
hours. The results are absolutely finger licking fabulous.
